You want to make sure to keep an eye on your health bar or other players will destroy your vehicle. I have to admit, it is an odd choice for controls as it does not feel natural but that could be a me thing. To cause maximum damage, you can press R3 either forward or left/right to give yourself a little extra boost right before impact. Once you do have the vehicle, let the mayhem begin.

I can only speculate but my guess is, since it is a multiplayer game, they wanted the largest number of people to be able to download and play the game. Originally slated to be a launch title, it was announced shortly before release that it would be a free PS Plus offering in February and March of 2021. Bugsnax coincided with the launch of the PS5 and is not a multiplayer title so it is hard to foresee its impact. 2 of them, Rocket League and Fall Guys, have turned out to be monster hits.
